Fall is in full swing, and what better way to get into the fall spirit than by making some Pumpkin Spice oatmeal cookies? Whether a sweet treat is needed to snack on while watching scary movies, or you need something to bring when headed off to a party, these delicious cookies are perfect for any event this season.
1 cup of all purpose flour
1 teaspoon of ground cinnamon
1 teaspoon of pumpkin pie spice
½ teaspoon ground cloves
¾ teaspoon baking soda
½ teaspoon of salt
¾ cup cream shortening
1 ⅓ cup of light brown sugar
2 eggs
1 teaspoon of vanilla
1 cups of raisins
2 cups of oatmeal
To start this recipe, the oven will need to be preheated to 350 degrees. In either a stand mixer or a medium bowl with a hand mixer, add three fourths cup of cream shortening and one third cup of light brown sugar. Once mixed, this will be the base. Then add two eggs and one teaspoon of vanilla to the mixer, and mix until smooth. Be sure that it is homogenous with the other ingredients.
Next up, most of the remaining ingredients will be added into the same bowl. Mix the dry ingredients in a bowl and then add them gradually to the wet ingredients. Dry ingredients include one cup of all purpose flour, three fourths teaspoon of baking soda, one teaspoon of ground cinnamon, one teaspoon of pumpkin pie spice, and one half teaspoon of ground cloves. Beat for about two minutes, or until mixed completely. Then add two cups of oatmeal and one cup of raisins into the bowl, and mix well. Lastly, add one cup of chopped nuts, if desired.
After mixing all of the ingredients together, place the cookie dough into the refrigerator for about 45 to 50 minutes until firm. This will make a huge difference in the cookies once baked, making them taste better and have a better chew.
Once the cookies have cooled in the refrigerator, they need to be formed into small balls of dough, about the size that can fit into one’s palm. After the cookies are shaped, place them onto a greased baking pan and bake the cookies at 350 degrees for about six minutes or until the cookies have become lightly browned. Once cooled, the perfectly warm and mouth watering pumpkin spice oatmeal cookies will be complete!
